Serve with a creamy polenta in the winter, or with fresh roasted vegetables when the weather is milder. Unlike regular hunted deer, our farmed New Zealand deer Osso Bucco never has that “wild” taste so characteristic of game, but rather, it’s mild and rich, flavorful but not gamey. The deep rose red meat is lean (one-fifth the fat of beef, plus it has more iron and Vitamin D – delicious and nutritious!) but not tough. Sourced from family-owned farms that never use hormones, antibiotics, genetically modified or animal by-products in their feed, this meat comes from grass-fed, free-range 100% New Zealand Red Deer.
