Naturally lean, red deer loin has 1/5 of the fat of regular beef, with less cholesterol and fewer calories. You’ll love the deep rose color, the mild, rich, and woodsy taste, and the superb tenderness of red deer loin. Roast whole, or cut into steaks for barbecuing or pan searing. This is a lean but soft cut, so it’s best to cook it to medium rare to ensure tenderness. And add a little oil or butter to develop a nice crust when searing or grilling, while at it—pairs beautifully with sweet fruit glazes or any creamy seasoned sauce.

A bold piece of meat to bring to any table, our Cervena Venison New York Strip Loin can be roasted and served whole as an impressive presentation piece, or cut into more petite NY strips. Unlike wild deer, its flavor is mild rather than gamey, with a delicateness that sets it apart from many other red meats. Since it’s also naturally lean and protein-rich, venison offers a healthy substitute for other red meats. These meats come from animals raised under strict quality requirements, humane lifestyles, and a diet free from chemicals, hormones, or steroids. This ensures you always receive a sustainable, first-rate product to serve on the dinner table.

PREPARATION

Unless it’s used for stews, braises, and slow-cooked meals, we recommend cooking this cut no more than medium-rare since it can dry out and become tough very easily. It does not require a ton of seasoning, as the deer enjoy a natural diet rich in verdant grasses, fruits, and nuts that infuse the meat with flavor. However, a touch of olive oil, salt, pepper, and thyme will help give it a nice crust during searing.
