The Flat Iron steak is known by many names including, the Top Blade, Shoulder Top Blade, or just the Top Blade filet. Gaining popularity in recent years thanks to its long list of excellent qualities, the Flat Iron is not only flavorful and succulent but one of the most versatile cuts available. Almost as tender as the tenderloin, yet at a fraction of the price, the Flat Iron steak marries every meat eater’s favorite characteristics (great quality at an approachable price point) into one excellent portion. Cut from the shoulder (or the Chuck), this is the same area many other delightful portions come from. A well-marbled section, the Flat Iron boasts big flavor, and when prepared correctly, yields juicy and tender results!

Preparation Instructions

Defrost to room temperature then broil or BBQ approximately 8 minutes for rare, 10 minutes for medium and 12 minutes for well; turning once halfway.
